Setup to Structured Meat Analogues: An Introductory Workshop for the Twin Screw Extrusion & High-Moisture Meat Analogue (HMMA) Processing

Course content:

  • Overview of twin-screw extruder setup & fundamentals
  • Raw materials: Description of ingredient composition and moisture adjustment
  • Principles and mechanisms of twin-screw extrusion: Understanding material flow, mixing, shearing, and texturization
  • Components and design of a twin-screw extruder system: Function and role of key elements such as screws, barrel, die, and feeder
  • Applications of twin-screw extrusion (TSE) in food product development

Product Manager for Food and Feed Extrusion at Collin Lab and Pilot Solutions

Speaker information/ background/achievement:

With over 8 years of experience in the food industry, Dr. Carl Dolgow specializes in food and feed extrusion. He studied Food Process Engineering at the University of Applied Sciences in Fulda (Germany) and Food Science at the University of Applied Sciences in Kleve (Germany). His research as a doctoral student at the University of Kassel (Germany) focused on the extrusion of food and animal feed products.

·       Producing soya chunks using hot-surface cutter

·       Evaluation of the difference between HMMA & LMMA processing behavior and product characteristics

·       Addressing the safe & efficient operation of the twin-screw extruder

·       Procedure for stopping the extrusion process & shutting down the unit

·       Practical demonstration of fast & effective cleaning methods for cleaning the extruder after each process.
